Hara Bhara Kabab

A nutritious tikki filled with the goodness of spinach, potatoes, peas and with the aroma of roasted gram flour. I had this for the first time at a friends place. I loved it so much that I made it for a baby shower.

Ingredients :
Spinach : 2 cups
Potato : 2 (medium sized)
Green Peas : 3/4 cup
Ginger : 1 inch
Green Chilli : 3-4
Besan/ Gram Flour : 2 tbsp
Chat Masala : 1 tsp
Amchur Powder : 1 tsp
Salt according to Taste
Bread Crumbs : For rolling the tikki's
Oil : for shallow or deep fry

Procedure :
1. Boil the potatoes and green peas. Also clean and blanch the spinach.
2. Take the blanched spinach and cut into pieces.
3. In a pan add gram flour and roast till they give out nice aroma. (make sure not to burn it)
4. Add the roasted gram flour to the spinach. Add grated potato to it.
5. Make paste of ginger and green chilli and add it along with green peas, amchur powder,chat masala and salt to the potato mixture.
6. Now shape them into tikki's and roll them into bread crumbs shallow fry or deep fry the tikki's.

Salmon Kebabs

This is one fish here that I find all around the year in American stores. My experience of buying fish from Indian markets have not been so good here. Every time I have bought fish from Indian markets I have either found a bad smell emanating from them or white goeey stuff come out when I cook them. So I stick to buying fresh Salmon.

Ingredients :
Salmon Meat (After cleaning) : 3/4 cup
Green Chili's : 2
Egg : 1
Onion : 1
Cumin Powder : 1/4 tsp
Coriander Powder : 1/2 tsp
Red Chilli Powder : 1/2 tsp
Black Pepper Powder : 1/4 tsp
Amchur Powder : 1/4 cup
Garam Masala : a pinch
Cilantro : 1 tsp chopped
Salt : according to taste
Oil : To shallow fry

Procedure :
1. Mix all the ingredients in a bowl except oil
2. Make them into small gooseberry sized balls.
3. Flatten them and shallow fry on a tawa.

P.S : I used fresh salmon. Cleaned it up and mashed them with a fork. You can substitute with a canned one.

Chicken Cutlet

I loved this recipe. I have made this for potluck and even when I called people for dinner. But I have always deep fried them. Today I shallow fried them and the result was really good. I had them with chicken fried rice. The combination was heavenly.
Ingredients :
Ground Chicken : 250 gms
Potato : 1
Pepper Powder : 1 tbsp
Chicken Masala : 2 tsp
Salt according to taste
Green Chilli : 3 -4
Curry Leaves : 5-6
Ginger Garlic Paste : 1 tbsp
Oil : 1 tbsp + 2 tbsp for shallow fry/ for deep frying
Egg White : for Coating
Bread Crumbs : for coating
Procedure:
1. In a pan heat oil; add ginger garlic paste and fry for half a minute.
2. Now add chopped green chilli and curry leaves.
3. Add ground chicken and cook till the meat turns white; add pepper powder, chicken masala and salt mix well.
4. Once it cools down add mashed potato.
5. Roll them into small rounds; coat with egg white and bread crumbs.
6. Shallow or deep fry them.

Spicy Egg Fry


Spicy Egg Fry:
A dish made when lazy to make anything else. A dish in which the effort is very less. Goes well with rice.

Ingredients:
Egg Boiled- 2-3
Chilly Powder- 1 Tsp
Salt- 1 tsp
Asafoetida- a pinch
Oil- 1 Tsp

Procedure:
1. Cut the boiled egg vertically.
2. Make a paste with the rest of the ingredients( except oil) and dip the eggs in the paste.
3.On a non-stick pan pour the oil and fry the egg.

Kabuli Chana Vadas (Chick pea Vadas)



Ingredients:
Soaked Kabuli Chana- 1 cup
Onion- 1
Cumin Powder- 1/2 tsp
Coriander Powder-1/ 2 tsp
Red Chili Powder- 1/2 tsp
Coriander Leaves- A bunch
Oil for deep frying
Salt to taste

Procedure: 
1. Grind all the ingredients together (except oil) in a mixer*
2. Make small sized balls and deep fry in oil.

Notes:
1. Grind the chana first and make sure not to make a paste of it. Grind smaller quantities to get a but coarse paste
2. Onion's can be chopped finely with a knife and mixed.

Paneer Aloo Tikki

I found this recipe from another food blog. Both are high fat food items. So I decided to reduce the fat a bit and shallow fried them instead of deep frying.

Ingredients:
Potato- 2
Cottage cheese (Paneer) - 2 cup (Grated)
Bread - 2
Onion - 1
Coriander Powder- 1tsp
Chilly Powder- 1 tsp
Cumin Powder- 1 tsp
Coriander Leaves- a small bunch
Oil- 3- 4 Tbsp per pan
Corn flour Paste
Breadcrumbs
Salt to Taste

Procedure:
1.Soak the bread in water for a while as soon as it becomes soft take it out mix them with boiled and masked potatoes.
2. Mix all the other ingredients except oil (bread crumbs and corn flour paste too)
3. Keep the Cottage cheese in the refrigerator for a while as it will be easy to grate.
4. Make tikki's with the dough. (I made it into several shapes)
5. Dip it into Corn flour paste and later give a coating of bread Crumbs.
6. Shallow fry them on a non- stick pan.

Chicken Lollipop


Chicken Lollipop:

Ingredients:
Chicken Drumsticks -5 to 6
Ginger Garlic paste- 2 TBSP
Chilly Powder
Turmeric Powder
Garam Masala
Corn flour
Lemon juice
Egg
Salt to taste
Oil for deep frying

Procedure:
1.Marinate the drumsticks with salt ginger garlic paste and keep aside for a 10 minutes.
2.Chop the coriander leaves finely and make a thick paste of red chilli powder, Turmeric Powder, Garam masala, corn flour, lemon juice and egg.
3.Marinate the chicken at least for two hours.
4.Wrap the end of drumsticks using aluminium foils.
5.Deep fry the pieces. (can squeeze lemon juice over the pieces for a tangy taste).

Paripuvada

Paripuvada:

Ingredients:
Soaked Chana Dal -2 Cups
Onions(Chopped into small pieces)-1 Cup
Ginger (Chopped Finely)-1/2 Tbsp
Green Chillies -3 Tbsp
Fennel Seeds-2 Tsp
Asafoetida a pinch
Curry Leaves
Salt
Oil

Procedure:
1. Soak Chana Dal for 2 Hours and beat it in a mixer for few seconds so that its not chopped completely.
2.Mix all other ingredients.
3.Make small balls (gooseberry size) and flatten it.
4.Fry it in oil.



Egg Bhajji

Egg Bhajji:

Ingredients:
Boiled egg:4
Gram Flour
Chilly Powder
Salt
Asafoetida a pinch
Oil for deep Frying

Procedure:
1.Mix the gram flour with chilly powder, salt and asafoetida.
2.Cut the boiled vertically into 2 halves.
3.Dip the boiled egg into the gram flour batter and deep fry.






Potato Fritters

Fried items are a hit no matter what. You just keep on gulping them down. Here is an instant fritter you can whip up in no time.

Ingredients:
Potato: 1
Onion : 1
Egg : 1
Coriander Leaves : 2 tbsp
Corn Flour : 1 tbsp
Chilly Flakes : 2 tsp
Cumin Powder : 1/2 tsp
Salt according to Taste
Oil for deep Frying

Procedure:
1. Grate the potatoes and onion (I prefer grating as it cooks easily and binding them into small rounds is easy too).
2. Mix all the ingredients in a bowl other than oil. 
3. Make them into small round balls or flatten them and deep fry.

Serve with tomato ketchup.
